For normal engines, 5w30 and 0w30 are probably the most ideal. 30 weight is 30 weight, but 5w/0w are going to get the internals protected faster at startup. Those oils weren't around 20 years ago and are objectively superior. For big builds, a higher weight oil like 40 will give you some more protection. 50 would work too, but that's quite a step up and you're going to end up with a much thicker cold weight. 20w is a step backwards. 5w40 is probably as good as it gets, but if you can find a 0w40 that would be awesome.
